Tuna Spinach Salad


This light and refreshing salad has become one of my favorite lunches! It leaves you feeling satisfied, but not overly full. I have a client who uses this consistently as an easy weeknight dinner as well. It takes almost no thought to throw these ingredients together. I like to eat this in a lettuce wrap or whole wheat tortilla. Hope you enjoy!

INGREDIENTS​:

  • 2 5 oz cans of tuna in water

  • 2 c fresh spinach, roughly chopped

  • 2/3 c plain Greek yogurt

  • 1/2 c shredded mozzarella cheese

  • 2 chopped roma tomatoes

  • 2 tsp fresh lemon juice

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

  • Optional: 1/2 c matchstix carrots

INSTRUCTIONS:

Combine all ingredients together in a bowl, mixing thoroughly. Serve with lettuce wraps, whole wheat tortillas, or eat plain.

NUTRITION:

(Makes 2 servings. These numbers are with the optional matchstick carrots)
Per serving: Calories: 285; Fat: 7g, Carbs: 11g, Protein: 43g
