Strawberry and Peanut Butter Proats
This cold winter weather makes warm oats appeal to me so much more! There's something about having a stomach full of warm oats that just feels like a giant hug to me.
Think of these proats like a healthy spin on PB&J. They're packed with protein (mainly from the egg whites), but also full of fiber. Fiber aids greatly in digestion and is especially great to incorporate into your diet if you're trying to lose weight. It also helps you feel and stay full. Enjoy!
INGREDIENTS:
1/2 c. rolled oats
1/2 c. unsweetened almond milk
6 large, fresh strawberries, chopped
1/2 tsp. vanilla extract
1 pinch salt
1/3 c. liquid egg whites (or 3 large egg whites)
1 tbsp. peanut butter (be sure to check ingredients to make sure there's no added sugar)
Optional: Stevia (I used 2 packets) or 2 tsp. honey
INSTRUCTIONS:
In a small pot, combine the following ingredients: oats, almond milk, water, strawberries, vanilla, and salt. Bring to a boil and then reduce to low heat to simmer for about 5-7 minutes, being sure to stir occasionally. (This prevents the oats from sticking to the pan.) Then, remove the pot from the heat completely.
Carefully add the egg whites to the pot. Be sure to make sure the egg whites are fully incorporated into the mixture.
Return to low heat and cook for about 2-3 minutes, until the oats are thick.
Top with peanut butter and optional ingredients if you choose.

Makes 1 large serving.
