Healthy Egg Salad
This mayo-free egg salad is super easy to whip up and a great source of protein! I made this over the weekend and found it to be an easy weekday lunch over a piece of toast or a simple afternoon snack over greens. It's just enough to tide you over, but not so much that it ruins your appetite for the next meal. The ingredients below make 8 half cup servings, so cut this in half if you aren't feeding a family. Enjoy!
INGREDIENTS:
12 eggs
1 and 3/4 c. diced celery (51g)
3/4 c. unsweetened, plain Greek yogurt (170g)
3 tsp. Dijon mustard
3/4 tsp. sea salt
3/4 tsp. pepper
2 tsp. fresh dill
INSTRUCTIONS:
Hard-boil, peel, and roughly chop the eggs.
Place in a large mixing bowl and add all other ingredients. Stir to fully combine.
Serve over greens, toast, or in a whole wheat tortilla.
