Chopped Chickpea Salad
I have found the perfect party salad! This salads whips up super fast and is light and refreshing, making it great to take to any summer BBQ. I packed this in my beach cooler for lunch last week and it was perfect! I also brought it along to a family get-together and everyone loved it! Absolutely no cooking required. Enjoy!
INGREDIENTS:
Salad:
15 oz. can chickpeas (also called garbanzo beans), rinsed & drained
1 red bell pepper, chopped (125g)
1 yellow bell pepper, chopped (101g)
1 orange bell pepper, chopped (133g)
1/2 red or white onion, chopped (67g)
30 grape tomatoes, halved
2 medium cucumbers, sliced and quartered (487g)
4 oz. feta cheese crumbles
1/3 c. pitted kalamata olives, optional
Dressing:
2 tbsp. olive oil
4 tbsp. lemon juice
2 tsp. minced garlic
2 tsp. oregano
salt and pepper, to taste
INSTRUCTIONS:
Combine all salad ingredients in a bowl and mix well.
In a small, separate bowl, combine dressing ingredients and mix well.
Pour dressing ingredients onto salad and toss again to thoroughly incorporate.
Season to taste with salt and pepper.
