Berry Cheesecake Overnight Proats
I recently came across this recipe and had to try it in an effort to find another breakfast I could make ahead and eat on the fly. These overnight oats did not disappoint! I've tweaked it to be a bit more macro-friendly and it is every bit as delicious as the original recipe. Enjoy!
INGREDIENTS:
1 c. fresh blueberries or raspberries
1 tsp. vanilla extract
1 packet stevia
1/3 c. oats
1/2 c. low fat cottage cheese
1/3 c. unsweetened vanilla almond milk
1 tsp. chia seeds (optional)
INSTRUCTIONS:
In a small bowl, combine the berries, vanilla, and stevia. Mash together until a compote is formed.
Add the oats, cottage cheese, milk, and chia seeds (if using) and stir well until everything is thoroughly combined.
Refrigerate overnight or at least 8 hours. Top with extra berries before serving if you'd like!
