Bacon and Sweet Potato Meatloaf
This is not your average meatloaf! With the perfect combination of sweet and savory, this blows regular meatloaf out of the water! The raisins are the perfect bite of sweetness, balanced perfectly with the taste of bacon and sweet potato. This is a hearty meal, so we love to pair it with something light and green, like a spinach salad or green beans. Hope you enjoy!
INGREDIENTS:
2 1/2 lbs. lean ground beef (I used 93/7)
1 medium sweet potato, shredded
1 yellow onion, diced
1 lb. uncured bacon (I used 14 slices)
1 c. almond flour
2 eggs
1/2 c. raisins
1/2 tbsp. cinnamon
1 tsp. garlic powder
1 tsp. onion powder
sea salt and black pepper, to taste
INSTRUCTIONS:
Preheat oven to 400 degrees. Chop half of the bacon (I used 7 slices for this) into bite-size pieces. Add the chopped bacon, onions, and raisins to a deep saute pan. Allow everything to saute for several minutes, until the onions become translucent and the raisins begin to plump.
While the bacon, onions, and raisins saute, shred the sweet potato using either a hand shredder or food processor.
In a large bowl, combine the onions, raisins, cooked bacon, shredded sweet potato, ground beef, eggs, almond flour, and seasonings. Mix together thoroughly (I used my hands for this) and separate into 2 loaf pans. (To save yourself some clean-up, you could purchase the disposable loaf pans!)
Top the meatloaf with the remaining slices of uncooked bacon.
Bake for 45-50 minutes.
