Greek Chicken Lettuce Wraps with Tzatziki
One of my clients following a low to moderate carb nutrition plan recently shared this recipe with me and it did not disappoint! These Greek Chicken lettuce wraps are very easy to make and have great flavor! You could easily swap the lettuce wraps for a whole wheat tortilla if you're looking for a bit more substance with this meal. Hope you enjoy!
INGREDIENTS:
Greek Chicken:
1.5 lbs boneless, skinless chicken breast, cubed
1 tbsp. lemon juice
1 tsp. oregano
1 tsp. parsley
1 tsp. garlic powder
salt & pepper, to taste
1 tbsp. olive oil
Tzatziki Sauce:
1/2 c. plain Greek yogurt (I used Fage)
1/4 c. grated cucumber
1 tbsp. lemon juice
1/2 tsp. dill, dried
1/2 tsp. garlic powder
salt, to taste
Toppings:
1/2 c. cherry tomatoes, halved
3/4 c. cucumber, sliced
1/3 c. red onion, thinly sliced
12 lettuce cups
INSTRUCTIONS:
Add the following ingredients to a large bowl: chicken breast, lemon juice, oregano, parsley, garlic powder, salt, and pepper. Mix well until the chicken is fully coated.
Heat oil in a large skillet over medium-high heat. Add the seasoned chicken breast and cook for about 3-4 minutes on each side or until fully cooked through. Remove chicken from the skillet and set aside to cool.
Add the following ingredients to a small bowl: Greek yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt. Mix well.
Assemble the lettuce wraps by topping each lettuce cup with cooked chicken, then tzatziki sauce, then additional toppings.
